A soft, Burgundian-style Pinot with expressive raspberry and black cherry notes resulting from thick skinned fruit that benefits from nuanced minerality. Smooth and velvety tannins mingle with subtle coffee and caramel tones resulting from four months on medium toast French oak.
Cold soak lasted two days. Fermentation started at 60°F and increased to 75°F for five days, ending at 80°F to achieve desired dryness. Carefully structured pump over regime for one hour, three times a day. 100% malolactic complete.
